Sweet potatoes have yin building properties to help you rebuild your essence and reconnect with your roots. They are also high in Vitamin A for enhanced vision. This pie can also be prepared with yams.
Yields: 1 medium sized pie Cooking time: 30-40 minutes
1 1/2 cup sweet potatoes, cooked, peeled and pureed (approximately 4) 1/2 cup agave nectar
3 tablespoons molasses
1/2 cup almond, hemp, rice or goat milk
1/2 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon ground ginger 1/4 teaspoon ground cloves
Combine sweet potato puree with agave nectar, molasses and milk alternative. Fold in vanilla and spices. Pour into muffin tins or a wheat or gluten free pie shell and bake at 375 degrees for 30-40 minutes.
